I had friends over for dinner a couple of nights ago and I wanted to make something easy to prepare, yet really tasty. So I made my go-to recipe of roast chicken and chorizo. It is ridiculously simple to make, yet tastes like you’ve put loads of effort into it. You literally just throw the ingredients into a roasting tin and then place it in the oven for an hour and voilà…a delicious dish that everyone will love.
Ingredients
8 chicken thighs, skin on.
300g chorizo, cut into 2cm chunks (my favourites are Brindisa and Unearthed)
400g shallots, peeled and halved
1 red pepper, deseeded and cut
1 yellow pepper, deseeded and cut
1 orange pepper, deseeded and cut
5-6 thyme sprigs
5 bay leaves
3 tbsp extra virgin olive oil
200ml white wine
Method
Preheat the oven to 220C (200C fan), 425F, gas mark 7. Arrange the chicken pieces in a large roasting tin and scatter with the chorizo, shallots, peppers, thyme and bay leaves.
Drizzle with olive oil then place in the oven for one hour, adding the wine halfway through cooking. After an hour, the chicken will be falling off the bone, the chorizo will have released its glorious oil, the peppers will have softened and charred and the shallots will be sweet and tender.
Serve this with anything you like…mashed potatoes, roast potatoes, crusty bread, a salad. Anything! I prefer to serve it with sweet potato dauphinoise and it works perfectly every time.
