NIGELLA’S TOTALLY CHOCOLATE CHOCOLATE CHIP COOKIES

Today marks the first day of National Chocolate Week (8th – 14th October), and if a week devoted to celebrating chocolate isn’t a reason to celebrate, I don’t know what is!  To this end, I thought I would make some of Nigella Lawson’s Totally Chocolate Chocolate Cookies to mark the occasion.

These cookies are incredibly decadent…rich, dark and intense, rather like an injection of chocolate to make your heart pound!  Perfect with a cold glass of milk or a nice hot cup of tea.

Ingredients
125g dark chocolate minimum 70% cocoa solids
150g plain flour
30g cocoa powder sieved
1 tsp bicarbonate of soda
½ tsp salt for pasta water, to taste
125g butter, soft
75g light brown sugar
50g white sugar
1 tsp vanilla extract
1 medium eggs cold from the fridge
350g dark chocolate chips (or semi sweet chocolate morsels)

Method

Preheat the oven to 170°C/gas mark 3. Melt the 125g dark chocolate either in the microwave or in a heatproof dish over a pan of simmering water.

Put the flour, cocoa, bicarbonate of soda and salt into a bowl.

Cream the butter and sugars in another bowl.  Add the melted chocolate and mix together.

Beat in the vanilla extract and cold egg, and then mix in the dry ingredients.

Finally stir in the chocolate morsels or chips.

Scoop out 12 equal-sized mounds – an ice cream scoop and a palette knife are the best tools for the job – and place on a lined baking sheet about 6cm apart. Do not flatten them.

Cook for 18 minutes, testing with a cake tester to make sure it comes out semi-clean and not wet with cake batter. If you pierce a chocolate chip, try again.

Leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.

TIP: This recipe makes exactly 12 cookies.  I only needed half that amount so I decided to freeze the other half.  When I was spooning the mixture onto my oven sheet, I spooned  6 of the chocolate domes onto a tray, popped them in the freezer and when they’re hardened, I sealed them in a freezer bag, and popped them back in the freezer.  You can bake them from frozen at a later date.  That way, I’ve got 6 decadent chocolate cookies at my disposal to enjoy at any time. Perfect if a friend decides to pop in unexpectedly.  Or when I’m feeling particularly greedy!

    I love Nigella’s recipes – they’re always so straightforward and easy to follow. These look great!

      Yeah they were so easy to make. Next time, I might reduce the amount of chocolate chips though. They seem to be a bit too intense for most of my friends!
