I feel a bit silly posting a recipe for something as simple as an omelette but this was so tasty, I just wanted to share it. I don’t like diets, I always think its best just to eat tasty, nutritious food that you enjoy and this omelette is so quick and easy to make, plus its really tasty. Ideal for a week night when you don’t have much time, energy or inclination to cook after a long day at the office.
INGREDIENTS (The ingredients below are for one omelette)
2 large eggs
6 cherry tomatoes, halved
25g/1oz feta
1 tbsp basil leaves
1/2 a spring onion, finely sliced
1 tsp oil, I used rapeseed but you can use what you like
1 tsp pine nuts
Salt & Pepper to season
Start by switching on your grill/broiler to a high heat. Place your pine nuts in a dry frying pan and heat over a medium heat, tossing throughout. Keep your eye on them as the burn easily. You just want them to turn golden which should only take about 1-2 minutes. Put them to the side to cool.
Heat the oil in a pan (I used a 18cm pan) then add the spring onions and sauté for about a minute. Whisk the eggs, adding a pinch of salt & pepper, then pour the egg mixture into the pan with the spring onions.
Cook over a medium heat for about 3-4 minutes, pulling the mixture in from the sides towards the centre until the omelette is half cooked.
Place the cherry tomatoes, cut-side up, on top of the omelette, along with the basil and the feta.
Then place under the grill/broiler for about 2 minutes until it turns golden on top and puffs up a little.
Slide the omelette onto a warm plate, scattering the pine nuts on top and serve immediately.
