cake mix

I love cake, adore it. Victoria Sponge cake is my all-time favourite. But there is one thing I love more than cake, and that’s cake mix.

When I was a young girl I used to make cake mix just to eat the mix, I had no intention of baking it. My younger brothers and I would stand around the kitchen counter, each armed with a wooden spoon and we’d devour it. If it was cold and wet outside, the first thing I would do is get out the mixing bowl, the eggs, butter, flour and sugar. It would instantly make us all feel better. If we were about to sit down to a movie, a bowl of cake mix would be whipped up and we’d all sit cross legged on the floor with the bowl in the middle. And no, we weren’t a family of porkers! We all just loved cake mix.

As soon as it hits your mouth, your taste buds zing with the sugary sweetness of it. You know you shouldn’t really eat it but you can’t help it. And even when you start feeling sick, you’re still compelled to keep eating until the bowl is finished. And even after the bowl is finished and you’re still feeling quite sick, you wish there was more.

I must admit, even now when I make cakes, I always add a bit more of each ingredient to allow for me dipping my finger spoon into the mix throughout the process. There have been too many occasions over the years when I’ve been disappointed by how small a cake has turned out without realising that I ate too much of the mix before it went into the oven!

    I can totally relate to this although I was never daring enough to just make a bowl of cake mix and eat it like that (though I am sure I am solely responsible for recipes yielding less than they intended by eating entire brownies’ or muffins’ worth of batter!). I specifically remember my flatmate once coming into the kitchen when I was making brownies and giddily asking whether she could lick the bowl and I flat out told her ‘No you can’t. That’s my favourite part’ … lol. I did later share the bowl with her but still, it goes to show just how much I love licking the bowl (ideally with a decent heap of ‘extra’ batter at the bottom of the bowl that ‘just’ ‘would’ ‘not’ ‘fit’ into the pan for risk of overflowing ;-)).
