RIDICULOUSLY MOREISH COCONUT COOKIES

A few weeks ago we had a truly lovely girl called Irene come to our office for work experience. We all loved her immediately and then she made us love her more by baking for us. She made us these coconut cookies. I couldn’t believe how good they tasted and asked her for the recipe. So she gave me it and I tried it, and try as I might, I still can’t make them taste as good as hers tasted. Maybe she’s holding back a secret ingredient, I don’t know. Even so, these still taste amazing.

Ingredients (makes 25-30 medium-sized cookies)
155g/5.5oz plain flour
115g/4oz butter, unsalted
110g/3.8oz light brown sugar
100g/3.5oz caster sugar
1 egg, large
100g/3.5oz desiccated coconut
½ tsp vanilla extract
¼ tsp salt
½ tsp bicarbonate of soda

This recipe is so quick, its dangerous. Actually dangerous. You can get home from work, switch the oven on and in 20 minutes you have freshly baked cookies filling your house with the most incredible aroma. And I warn you, these things are so moreish its ridiculous.

In one sense I love Irene for giving me the recipe, but in another sense, I kind of wish she hadn’t as I had 9 of these yesterday and 2 already this morning…and I know I’ll have more later. I have no ‘off’ switch. I literally can’t stop eating them. That’s why they’re dangerous…they’re too good.

So this simple recipe starts with measuring out the ingredients…

Then placing them all together in a bowl…

And mixing together…

Then simply roll into medium-sized balls and place on a baking sheet lined with silicone/greaseproof paper…

P1180274And bake for 8-12 mins at 170c/150c fan/325F until golden and turning brown around the edges. Keep an eye on them though, they turn from golden to burnt very quickly!

Place on a cooling rack and they’ll cool down in just a few minutes. These are delicious just as they are, but in this case I added melted chocolate to them…

You can use whatever chocolate you prefer. I personally prefer dark chocolate but many of my friends prefer milk so for these I used Green & Blacks ‘Milk’. Not their Creamy Milk, but the Milk which is 34%. I also added in a few squares of their 70% for the batch I was going to scoff on my own.

Leave until the chocolate sets, or not. I ended up dipping the biscuits into the melted chocolate while I was waiting for the others to set! And there you have it…deliciously chewy coconut cookies drizzled with chocolate…

      It works so well together. They’ve been going down very well. And not just down my throat! My friends and family have been loving them too.
